Mediterranean Chickpea Salad
 Serves 2



1 14 oz can Chickpeas/ Garbanzo beans (drained)
1 cup Tomatoes, chopped
1/2 cup Sweet peppers, chopped
2 tbsp Red onion, finely chopped
1 tbsp Lemon juice 
1 tbsp Olive oil 
2 tbsp Fresh parsley, chopped (or 1 tbsp dried)
1/4 tsp Paprika 
Salt and pepper to taste 

Mix all ingredients and chill for 2 hrs before serving.
